Khira Gaintha.. Gaintha dunked in flavoured milk. Gaintha means soft rice balls and khira means milk. This is one of the traditional and delicious dessert delicacy of Odia cuisine....
This is specially prepared on the day of "Bakula Amavasya "and offered to Prabhu Jagannath . To protect the mango crop from all the evils this festival is celebrated in Odisha.

Ingredients:-
1 cups Rice flour
1 cup Sugar
Salt , as required
1 tablespoon Cardamom Powder
1/2 cup Fresh coconut , shredded
Milk-1 litre
1/4 cup Cashew nuts , crushed
1/8 cup Badam (Almond) , crushed
5-6 kesar strands

Method :-
 Boil 3 cup milk in a pan and a teaspoon of salt and sugar to this.
 Now gradually , add the rice flour to the milk and keep stirring.
 Make sure there aren’t any lumps. Lower the flame, cover the pan with a lid and cook it for few minutes.
Take this mixture and turn it on to plate. Let it cool.
After cooled, just knead it & forms small dumplings.
In an another kadai/ Pan boil the rest of milk .
Simmer in low flame until milk thickens. Add the rest of the sugar, cardamom powder and heat the milk some more.
Now one by one drop the rice balls into the boiling milk and continue stirrings.
Add the coconut in the end along with some dryfuits and some strands of kesar. Serve it cool.
