Cauliflower curry


ଫୁଲ କୋବି ତରକାରୀ/ Cauliflower curry.. who doesn't love flavourful curry . A Hot bowl of flavourful curry with some hot steam plain rice..my Ultimate comfort food. I grew up eating these kinds of food,Fresh Home cooked food . Cauliflower,Another seasonal vegetables which I like only when in season . It tastes best in winters. Though it's now become a regular vegetable.. This curry brings back memories of my childhood.. When my mamma made this recipe, she always used to fry this cauliflower and then add to the gravy..and I m in love with that simple sauteed cauliflower.. always love to have them as it is and always my mamma shouted at that time ... "Don't eat the cauliflower as it is..let me cook the curry otherwise the cauliflower will not be sufficient for everyone".... And me and my sister always used to fight with each other who will have more numbers of cauliflower pieces in curry.. Now when we talked about those incidents it's always brings a sweet smile on my face.. Isn't every childhood memory so pure and precious??

Let's get back to the dish 😊, Phool gobi or cauliflower curry is made using onions , garlic ,ginger and tomatoes and other spices which gives a good gravy texture to the curry and hence it goes very well with roti as well as rice.So here is the recipe:-

Ingredients:-
Cauliflower - 350 Gm
Salt- 1/4 tea spoon
Onions- 1 big
Oil - 2 table spoon
Tomato - 1
Green Chilly - 2
Ginger - 1 inch in length
Garlic- 6 to 7 cloves
Coriander Powder - 1tsp
Potato- 1 big/2 medium
Turmeric Powder - 1 tbsp
Coriander Leaves -1 tea spoon
Red Chilli Powder - 1 tsp
Salt - According to taste
Garam masala - 1tsp
Cumin seeds - 1tsp
Oil - to fry cauliflower.

Method:-

Cut cauliflower into big pieces and soak them in salt contained warm water for 5 minutes so it gets cleaned thoroughly. Now take it out of the salt water and wash the pieces of cauliflower again with fresh water. Cut the potatoes in cube and keep aside.

Grind the tomato, green chilli , garlicand ginger in a grinder to make a fine paste.

Heat a pan with oil and put the pieces of cauliflower into it and sprinkle some turmeric and salt. Fry them until they turn brown and then take them out in a plate. Then again add little bit oil ,fry the potatoes. Fry till they are half cooked.Keep them aside.

In a separate pan, take 1 table spoon oil and add panchaphutan to it. Let them splutter. Now the masala paste,fry for sometime,then add turmeric powder and coriander powder to it. Fry the masala properly until the oil is not released from the masala and stats to float over the masala in the pan.

Now put the pieces of fried cauliflower, fried potatoes,salt, red chilli powder and garam masala into it and stir the masala for 2 minutes.

Add 2 cups of water and salt into this and cook till the water starts boiling and both the cauliflower and potatoes are cooked . Your Cauliflower Curry is ready. Take it out in a bowl and garnish with coriander leaves.
