Amba Besara Achara.. one more pickle recipe from my mother's recipes pandora box. Though I had made this few days back but forgot share it..This simple achara/ pickle needs only few basic things ...but the main hard work is to grate the mango,"Argh" it takes ages for me to grate only 1 kg of mango n one day of shoulder pain🤦, but when we ate enjoying the pickle it pays off all my hardwork. One Odia dhaga /Proverb is there .. "କଷ୍ଟ ନ କଲେ କୃଷ୍ଣ ମିଳନ୍ତି ନାହିଁ "meaning "No pain no gain".. it's perfectly fit for the situation 😀

Method:-
- Wash the mango n drychilly and dry them, Make sure that both are completely dry and has n you will store the pickle and also dry properly.
- Grind the mustard seeds and make a powder of it.
- Sterilize your jars in which you will store the pickle and make sure they are dry.
- Heat the mustard oil in medium heat till it reaches the smoking point, then switch off n let the oil cool down.
- After that chopped the green chilly in big chunks and grate the mangoes.
- Then coat the grated mangoes and chopped green chilly with salt, mustard powder, turmeric powder & mix well.
- Pour the oil till it completely cover the pickles.Put in a ceramic or glass jar.
- Keep it in the sun for 6-7 days,Your amba achaar is ready to use.
(Note:- Self life is six month if you stored it in fridge)
