Pariba kanji 🍲What could be a better way to eat vegetables . The seasonal n local vegetables boiled with some rice paste then seasoned with garlic and Panchaphutan to gives an amazing flavour.. ahh 😍 sounds interesting??? it's so nutritious and healthy but at the same time it's flavourful and tasty. whenever i made this , never satisfied with single serving.Here I m presenting one of my favorite soothing n comforting dish 🤗
Here's is the recipe:-
Ingredients:-
Green Papaya - 1/2 of one smallone
Radish-1
brinjal -1
tomato -1
Colocasia-1
Flatbeans-5/6
Pumpkin- few pieces
rice ( soaked)- 2-3 tbsp
Ambula ( drymango)-3-4 pieces
Panchaphutana -1 tsp
Garlic pods - 6-7 pieces
Curry leaves -6-7 nos
Dry Red chilli -2
Mustard Oil- 1 tbsp
Turmeric -1pinch
Salt - to taste
Method:-
*Firstly make a fine paste of soaked rice & tomato and keep aside.
*Cut all the vegetables in big chunk.
*Take a big Kadai ,add sufficient amount of water put salt and turmeric into this.Add greenpapaya and radish & close the lid for few minutes..then add rest vegetables into this and again cover the lid , boiled it till the vegetables are half cooked.
*Then add the rice -tomato paste & cooked it till the vegetables are cooked.Add Ambula into this. Now kanji is almost ready,only one thing left that is tempering..
{Note:- vegetables should not be overcooked, they should intact their shape}
For tempering:-
Heat another pan,add 1 tsp of mustard oil on it. Add the pancha phutana, red chilli, crushed garlic pods and curryleaves. Stir gently for 1 minute. Switch off the heat and pour it over the boiled vegetables kanji.Now it's ready to serve.
