Mutton curry (odiastyle)


Odia style mutton curry/ Mansha jhola...Isn't weekends are meant to be a meaty affairs? Mutton are favorite in Indian cuisines. There are lots of variation of mutton curries like Kosha Mangsho, rogan josh, laal maans, bhuna mutton, Kohlapuri mutton etc .All are in the same generic dish but each tastes different because of the use of different spices and souring agents . Generally cloves, cardamom, coriander powder, mace and nutmeg are used generously to enhance the flavour of mutton. This Odia stylemutton curry is full of flavours , aromatic spices and juicy mutton. I am sure no one will be disappointed by it's taste. And if once anybody try it, they will never forget the taste.so here is the recipe.

Ingredients:-
1 kg mutton
250 gm potato
250 gm onions (cut in Julienne style)
4 tbsp ginger and garlic paste
3-4 red chilly Powder
1 tomato (chopped)
1 big cardamom
1 bay leaf
2 2" cinnamon sticks
2 tsp turmeric
salt to taste
6 tsp mustard oil + 1 tsp for the marination

Method:-


Wash the mutton pieces and drain away all the water. Add salt, turmeric, 2 tbsp ginger n garlic paste and 1 tsp mustard oil. Mix well and keep aside.

Cut the potatoes into big chunks.

Heat the oil in a pressure cooker.

Add the potatoes and fry till golden brown. Remove and keep aside.

Add the  bayleaf followed by the cardamom and cinnamon sticks to the hot oil. Fry till they turn fragrant.

Add the onions, ginger and garlic. Fry them on low flame till they turn quite red in color. Add redchilly n Turmeric Powder. Add one chopped tomato. Fry till tomatoes becomes soft.

Next add the marinated mutton pieces. Fry them till they stop oozing water. You do not have to stir continuously. Keep the lid on the cooker without completely closing it. Stir once every few minutes. This process takes a long time around 30-45 minutes.

Once you see that the mutton pieces start leaving oil , add 4-5 cups of boiling water along with the fried potato pieces. Add salt as per the water quantity. Close the lid and cook for 2-3 whistles. Remove from flame.

Allow steam to escape before opening lid. Check if the mutton is done,else cook for another 1 whistles. Serve with hot steamed rice along with some green salad..This is a divine combination.
