Santula


ସନ୍ତୁଳା/ Santula..A classic and humble dish of Odia cuisine. Highly nutritional and healthiest dish .Every Odia family makes this often. Even if anyone has any Odia friend they must know about this dish and surely tried their hands at this.Because it  requires very less oil and  is made of fresh, seasonal Vegetables . Basically the vegetables used to make santula are very commonly available vegetables like pumpkin, potatoes, beans, raw banana,raw Papaya, green peas, drumsticks,brinjal & whatever available near you.It's simple yet soulful taste always touches to the soul. The magic of the dish lies on the tempering and the touch of roasted cumin n dry red chilli powder I make it so often that my apartment friends tease me sometimes , When we discuss about our dinner/lunch plans. It's my saviour dish when i m confused as to what to make . Healthy, tasty and easy to make ,what else do I need 😊
Here's the recipe...
Ingredients:-
Potatoes - 1 
Brinjals-1
Raw banana- 1/2 
Raw Papaya - 1/4
Green peas- 1/2 cup
Pumpkin- 100 gm
Tomato- 1
Beans- 6/7 
*Sun-dried uraddal chunks ( Badi)- 4/5 (optional)*
Turmeric powder- 1 tbsp
Roasted cumin and dry chilly powder - 1 tbsp
Green chilly- 1
Panchaphoton - 1 tsp
Mustard oil- 1 tbsp
Garlic cloves - 7/8
water as required
salt to taste
Method:-
1.Cut all the vegetables in cubes and Heat a kadai , add water to it. 
*(Optional step:- fry the badi and keep aside.)*
2.Add turmeric powder, salt, one whole tomato and  all the cut vegetables. Boil it till the vegetables are done.
3.In a pan, heat oil, add panchaphoton, allow it to crackle ,then add minced garlic and greenchillies and sautee it for few seconds.
4.Add the boiled tomato into this and fry for few minutes.
5.Transfer the boiled vegetables to the pan.
6.Add the roasted cumin and dry chilly  powder and some coriander leaves.
*(Optional step:- add the fried badi now )*
7.Simmer for 5-7 minutes and serve.
(Note:-  One can add any vegetables which are available near  like carrots, drumsticks,broad beans)
