Amba Khatta

The Big Odia thali always had a small sweet n sour chutney called as Khatta. We made up of these with variety of veggies or fruits.so amba Khatta basically a seasonal dish which we prepared when get raw mangoes . Raw Mango are cooked in an ample amount of jaggery   or sugar with flavouring from Panchaphutana.
Ingredients:-
Raw mango-2
Panchaphutana- 1 tsp
Curry leaves- 8 to 10
Turmeric powder-1 tsp
Roasted cumin n red chilly powder-1 tbsp
Dry red chilly- 1
Jaggery/ sugar-1 cup
Oil - 1 tbsp
Method:-
Firstly cut the mangoes into medium sized cubes. Heat a pan and add oil into it.add dry red chilly, Panchaphutana n Curry leaves n let it crackle. Then add mangoes n saute it. Add turmeric powder, salt n let it cover n cook the mango . after mangoes are  half cooked ,add add jaggery/sugar and cover n cook it again. Once jaggery/sugar melts ,mix well with mangoes. Simmer it for 2 minutes.Then switch off the heat. Serve it
