Chuin aloo baigan badi tarkari

Besara is a typical form of odia cooking which is prepared with mustard paste in mustard oil. The pungent flavour of mustard paste goes very well with  chuin (drumsticks),aloo, baigan n badi . these drumsticks pods are high source of calicum,iron n vitamins.
Ingredients-
Drumsticks-1
Potatoes-1
Baigan/brinjal/eggplant-1
8 to 10 badi (dried blackgrams chunks)
Tomato-1
Panchaphutana / pancha phoron-1 tsp
Green chillies-2 to 3
Garlic pods-5 to 6
Turmeric powder-½tsp
Dry red chilly-2 nos
mustard seeds-1tbsp
Salt
Corriander leaves
Method:-
-Soak mustard seeds for 30 min. Then grind it along with garlic pods and green chillies into a fine paste.keep aside.
-Cut potatoes and brinjal in wedges. Peeloff the outer layer of drumsticks and cut it into pieces.
- In a pan,add 2-3 cups water,salt , turmeric and bring to boil.add sliced potatoes first as it takes time to cook .once it half cooked,add  brinjal and drumsticks.donot overcook the drumsticks.add tomatoes . take out from heat and keep aside.
- fry some Badi n keep aside.
- Heat oil,add panch phutan,dry redchilly and when it starts crackling ,then add mustard paste n the boiled tomatoe now.fry it for few minutes,then add the boiled vegetables and bring to boil. Add the badi n corriander leaves.
-Enjoy it hot with steamed rice.
