Panasa katha tarkari/ Raw Jackfruit curry.
I am like  one of those people who don't like ripe Jackfruit because  the smell of the fruit, but love to eat the raw ones.. specially this curry. It has a subtle flavour and meat like texture, if you know how to cooked it properly then it easily match up to mutton curriesšŸ¤¤. This is the reason behind it is known as vegetarians mutton šŸ˜‚šŸ˜‚. I just love to cook this dish. But  cutting the raw Jackfruit is tricky task to do, it becomes so sticky and messy work. it becomes little bit easy  to cut if mustard  oil is rubbed on palms & the knife . Here is the recipe šŸ¤—
Ingredients:-
Raw tender jackfruit – 1 small (peeled and chopped)
Potato – 1 largeO
Onion–  2  
Fresh Ginger and Garlic Paste – 1 tbsp each
Tomato – 1 ( grated or finely chopped)
Panchaphutana – 1/4 tsp
Cumin seed powder – 1/4 tsp
Turmericpowder – 1 tsp
Chili powder – to tasteg
Garam masala powder – 1/4 tsp
Bay leaf – 1-2
Green cardomom – 2-3
Cumin seeds -1/2 tsp
Sugar – 1/2 tsp
Salt – to taste
Mustard oil – 5-6 tbsp
Fresh coriander leaves – 2 tbsp

Method:-
Peel and cut the jackfruit into  pieces (Be careful with that) Wash and keep aside.Do oil your hands and knife before peeling and chopping Jackfruit. Wash, peel and chop potatoes in 1 inch cubes.
Boil  the rawjackfruit  with a little salt and turmeric.  Drain the water and keep aside .
Heat a kadai and add the mustard oil to it. Bring it to smoking point and reduce the heat. Fry  potatoes . Remove in a plate . keep aside.
In the same oil add Bay leave, Panchaphutana, cumin seeds & green cardamom, Give it a stir.
Once it begin to splutter . Add sugar and stir. Add the chopped onion and ginger – garlic paste. Fry till the rawness of the paste goes away .
Add chopped tomatoes and fry till oil leaves sides and then add the dry powdered masalas and stir it.
 Now add the boiled jackfruit n fry potatoes pieces into bit. Mix nicely so that the masala gets  into the veggies. Cover and cook for a few minutes on low heat
 add  warm water for the curry. Give a good stir and bring it to boil.
 Let it simmer for sometime till a nice gravy is ready. Add chopped coriander leaves .
