Chenna Muduki

Chenna muduki... One more sweet dessert from Odisha. Though  it's not quite popular like chennapoda and Rasagola but if anyone has ever tasted this once , they know  how exotic it's tastes..It is widely sold  in each n every sweet stalls in Bhadrak district ,Odisha.Cottage chesse / panner cut is  in cubes and  cooked in sugar syrup till the syrup is caramelised  and is coated  over the chenna cubes. Sweets from  Odisha are mostly made up two things  one is chenna and the other one is sugar .. with these two there are tons of varieties of mitha(sweets)  made and relished with equal delight . 

Ingredients:-
Cottage chesse / Paneer- 250gm
Sugar- 2.5 cups
Water- 3 cups
Green cardmom powder - 1 tsp
For Caramelization:- 100gm sugar
Method:-
1. Heat a heavy bottom pan/ kadai, add sugar and water into this and mix properly till the sugar dissolves nicely. Cook for 2/3 minutes in low flame.
2.Cut the paneer into cube shapes and add into the sugar syrup and cook .
3. After adding the paneer ,Cook this around 20/25 minutes occasionally  gives it a stir.but rememeber to do  it very gently  so that paneer cubes doesnot breaks .
4.Let the sugar syrup goes inside the paneer cubes and cook it properly from every sides .Now add the green cardmom powder .
5.If the sugar syrup  reduced while cooking,then add ½cup warm water into this and cook.
6.In another pan, carmelised the rest of sugar in low frame and then add caramelised sugar into to the sugar syrup.It's gives a nice brown colour to the chenna Muduki.
7. Stir continuously ,so that no threads will form and cook for another 15/20 minutes.
8.When the original colour of Muduki  (brown colour)form,switch off the flame. 
9. Let it cool for atleast one hour then serve it.
