Pineapple Jam

Today morning we  enjoyed our breakfast with some whole wheat bread and  homemade pineapple jam.. my little one was so much excited to  scoop some jam from the jar and put it into her bread..that excitement of her gave  me immense happiness.
Actually m living in the outskirts of bangalore ,the place is surrounded with lots of farm land. So we always have that advantage to get fresh vegetables from nearby local shops...but due to lockdown all the shops are mostly closed or open within  certain time limits. From last month we are not getting enough fresh fruits/vegetables. Even the farmers are also  facing difficulties to sell their produce .but few days back some local farmers  contacted our society and nearby  societies to sell their vegetables and fruits, but only if we buy in bulk ....so  both the parties will benefited. We get our fresh fruits/vegeatables and they get their hard work earning. We all agreed to do that  and they delivered them within our soceity gates. From them  I bought 8 to 10 tiny tiny pineapples which are looked so cute and beautiful...after relishing some fresh homemade juices ,there were still  5 left and all are in ripened stage. Was Wondering what to do with them, suddenly I thought let's makes some jam out of them, so here's my homemade pineapple jam.
Ingredients:-
Pineapple - 5/6 small pineapples
Sugar - 1 cup
Lemon juice - 2 tbsp
Method:-
1.Clean the pineapple n cut into small small pieces.
2. Blend them with the help of a hand blender..don't make a fine paste.just coarse it .
3.Transfer into a heavy bottom pan/ kadai and add sugar to it.
4.Heat it up. Cook for 15 to 20mins in medium flame  till the sugar is dissolved and get little thick.
5. Add the lemon juice n cook for another 5 minutes.
6. Now switch off the flame. Let it be cool down completely .
7.Then store it in clean dry glass jar and enjoy this with bread ,roti or paratha .
(Note:- Self life is one month if you stored it in fridge )
