Today I prepare this traditional pitha called" Arisha pitha" for offering Bhoga to my house Bhagabanji. Arisha,is Part of Sukhila Mahaprasad ,Basically a crispy sweet dish made of rice flour kneaded in sugar/jaggery syrup & topped with sesame seeds.The crispy outside n delightfully soft inside makes it a unique combination. Ingredients:-
- Rice flour- 1/2 kg
- Jaggery/sugar -1/2 kg
- Oil/ Ghee - 1kg
- Cardamom powder 1/2 tsp
- Sesame seeds -1/2 cup
Method:-
- Take a kadai ,add 1 cup of water and the sugar or jaggery and heat it.
- Keep stirring it until you get a slightly sticky consistency.
- When the jaggery melts, add cardamom powder and slowly add small quantities rice flour. Continue to cook so that no lumps are formed.
- Turn off the gas and cool the mixture at room temp.put some oil/ghee on palm and roll some of dough n flat it with hand , spread some of the sesame seeds on it evenly.drop it into the oil and fry in hot oil. Cook both the sides well.
