Dalma


Dalma..Dal cooked with veggies and topped off with an aromatic tadka of ghee, Panchaphutana & coconut.it has the right combination of health & taste.

Ingredients:-
1 cup Arhar dal (Split Toor Dal)
2 Potatoes (Aloo)
1/2 cup Kaddu / Pumpkin
1/2 cup Brinjal/ Eggplant
1/2 cup Raw Papaya
1 Tomato, finely chopped
1 inch Ginger
1 Bay leaf (tej patta)
1 tablespoon ghee
1 Dry red chilli
1 teaspoon Panchaphutana
1/2 teaspoon roasted jeera n chilly powder
1/2 teaspoon Turmeric powder (Haldi)
Salt, to taste
1 cup Fresh coconut, grated
Coriander Leaves

Method:-
First get all the vegetables chopped and ready. It's a one single pot dish.Add the vegetables, dal, turmeric powder, bay leaf, salt and 3 cups of water into the pressure cooker. Pressure cook until one whistles on high flame. Once the pressure cooker cool releases pressure completely, you can open the cooker and keep the dal aside. The next step is to give a tadka to the Dalma with flavors.

Using a mortar and pestel pound the ginger until you get a rough paste.

Heat the ghee in a big kadai on medium heat. Add the red chiles, panchaphutana and the pounded ginger . Stir fry for a few seconds until you can smell the roasted aromas.

keep on eye on the heat , else the spices can burn and smoke.

Add this masala to the cooked dal and give it a good stir. Check for salt and spices and adjust to suit your taste. Add grated coconut and if needed add some water to adjust the consistency of the dal.  now add the roasted jeera n redchilly powder.

Give a quick boil and turn off the heat. sprinkle some corriander leaves.
